union square farmers market soul wrap
On our adventure to New York City, George and I visited the
Union Square Farmers Market and sampled apples, Manchago cheese and the vegan
Sol wrap. It was so delicious
George decided to come home and figure out how to recreate it. While I was busy editing photos, I enjoyed the smell of his cooking in the kitchen. I always treasure anything George makes because the main ingredient is love.
As we travel, we look forward to bringing you tasty recipes
from the different regions of the country and wrap it up into a colorful cook book! Our food and personalities are shaped by our environment and

Soul Wrap
Food is more than just nutrition, we eat to satisfy our
souls. I love when I eat something I have never eaten before and then going
home and recreating it in my own
creative way. This is a vegetarian wrap made with lentils and a gluten free brown rice tortilla.
Ingredients list:
1 cup veggie stock
2 cups water
1 cup split lentils
1 diced onion
2 minced cloves garlic
1 third of a cup of chopped walnuts
2 diced or grated carrots
2 cups baby spinach
4 leaves of fresh sage
2 pinches of Italian seasoning
3 tbsp white wine
3 tbsp extra virgin olive oil
1 tbsp Braggs or soy sauce
2 tbsp balsamic vinegar
salt and pepper to taste
First add the lentils and the veggie stock and water to the pot and a pinch of salt and
bring to a boil. Then reduce the heat and simmer for twenty minutes. Remove the lentils from the pot and add
half the olive oil, a teaspoon of
Braggs and the balsamic vinegar to the lentils in a bowl stir and set to the
side. Put the rest of the olive oil in the pan with the onion and sauté until
translucent. Then add the sage and
garlic, let the aroma start to
intoxicate your senses then add the white wine and cook out the alcohol. Add the rinsed spinach, carrots and
Italian seasoning and turn off the pot and let the residual heat cook them
through. Add a touch of salt and pepper and it’s done. Mix together the lentils
and the veggies and you have your lentil mixture. Heat the tortillas and stuff
with the lentil goodness and wrap.
Serve with a fresh side salad and you have a perfect meal.
